Why did the chicken cross the road?

To get away from my house! Because if it was here, it would have been cooked, shredded, frozen or bottled! I realized I'd been "blogging" for just over a year when I bought my chicken. I did a "chicken post" last year at this time. This year Macey's had boneless, skinless chicken breasts on sale for $1.19/lb (best I've seen since last year). The catch is you have to buy it in a 40 lb box.... So what did I do?! Bought 80 lbs! Yes. 80 POUNDS! As I'm in the middle of all my cooking one night, Nic says, "Sometimes I don't like all your ambition." I said, "Sometimes I don't either!"


I actually bought 40 lbs and then went back a couple days later and bought 40 more. I had several crockpots going, cooking several batches of chicken. I mostly cooked and shredded. Then I made several meals and froze over half of it. But the real adventure this time around was bottling or canning! I've never bottled chicken, well for that matter I've never canned anything with a pressure cooker. I bottled 32 pints (about 32 lbs) of chicken, which will be awesome food storage and very convenient. This whole process (cooking, shredding, canning, making meals...) actually took me a week to complete. Yesterday I made my enchiladas and got the last of the chicken into the freezer, whew! Here's approximately what I prepared:


-32 pints canned
-10 c. of shredded BBQ chicken
-10-12 c. of chicken tacos
-6 c. creamy Italian chicken
-15 prepared chicken roll ups
-6 c. filling for chicken roll ups
-20 enchiladas
-about 7 raw breasts, cut into strips, in fajita marinate
-12 raw breasts in lemon marinade
-13 raw breaded Parmesan breasts
-7 raw breasts
-4 c. cubed raw chicken
-30 c.(in 10 bags) of cooked shredded chicken

I think we may get sick of chicken! What do you think?! Nonetheless, I'm glad to have stocked the freezer and gotten some meat into food storage!

Wow, I'm impressed! That's a ton of work, but how nice to have all of that food prepared. It will make dinner easy whenever you have chicken.

You are amazing, the year I bought my first box of chicken I stuck the whole thing in the freezer....duh, big time duh..... 40 lbs. of chicken stuck together frozen, what a nightmare. Last year I bought 80 pounds, but I had to take the skin off all of it and then I froze it in 3 breast packages so easier to manage when I wanted it. This year I said I am skipping chicken, but after ready this I am feeling guilty !!!!!
You are very prepared!!!! Relax a little now !!!!

That really is soooo awesome! Just think of it this way... How many nights of dinner do you have prepared? and with two kids that will come in handy! So awesome. Kris never has to worry about me... I don't have your ambition! I wish I did!

I am proud of you. You did great! I know it was a lot but I bet you feel great when you have 2 kids and a hubby wanting dinner and you aren't in the mood to go to all the work. But, next time. Call me and I can help. I just live 2 doors down and we could visit and the girls could play.

All I have to say is WOW!!! Apparently I haven't been up to date on you! I am super impressed and would have never thought to do so much preparation! It is such a great idea though...my main excuse for not cooking is because "the chicken is frozen!" ha,ha! Way to go Natalie!
