Ham

On Easter Sunday, we had some of Nic's family over for dinner, his sister Alecia and her family as well as his parents, Clyde and Marj. I felt like the dinner turned out pretty well and the visiting was even better. I cooked a big ham and have loads of leftovers. I am planning on freezing some... but wondered what your favorite meals are to cook with ham!? I need your ideas and recipes!

You can make ham and bean soup. You can just fry some on a skillet and have fried eggs. I have a couple of recipes but I will have to figure them out.

SLOW COOKER LENTIL & HAM SOUP

Perfect rainy-day soup!

1 cup dried lentils
1 cup chopped celery
1 cup chopped carrots
1 cup chopped onion
2 cloves garlic, minced
1 1/2 cups diced cooked ham
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon black pepper
28 ounces chicken broth
1 1/2 cups water
3 tablespoons tomato sauce

Dump it all in your Crockpot. Cover and cook on low for 11 hours or high for 4-5 hours. This is a great throw-together-before-church recipe!

OVEN OMELETS (Food Network)

16 beaten eggs
1 cup milk
1 cup 1/2 & 1/2
6 T. mayonnaise
2 T. flour
2 cups shredded cheddar cheese
2 cups chopped ham
chopped green onions, 1 bunch

mix and match these optional items to your own taste:
sliced mushrooms
browned ground sausage
browned chopped bacon

blend first five ingredients and pour into greased 9x13
add fillings

Bake at 325 degrees for 35-40 minutes (I usually need to cook it longer)

I love to cube leftover ham, put it in a gallon ziploc bag and just keep it in the freezer for whenever I need it. (Shake it when it's half frozen, then you can scoop out whatever you need) Mostly I use it with eggs for breakfast, also a breakfast pizza with shredded potato crust, cream cheese/potato/ham soup. Good to add just a little to something and make a yummy flavor!

Hmmmm. I don't know any good recipes with ham. But I do know a very good cookbook you could buy! :)

Out here they shred what they can, add a can of crushed pineapple and like 1/2 jar of apricot jam and warm it in the oven and then serve on rolls. It is SO yummy! I will be the first to tell you that slip pea soup with a ham bone is NOT what you should make....my mom always did and I hated it! YUCK!

I love Mac & Cheese with ham. Very delicious! A simple recipe is:

1 1/2 cups uncooked macaroni
1/2 cup milk
1 can cream of chicken soup
2 cups shredded cheese
1 tsp yellow mustard
salt and pepper to taste
(You can add ham here, I have added bacon or hotdogs too)

Cook the pasta, mix with the soup, milk, mustard, salt & pepper, and
1 1/2 cups of cheese (ham). Cook covered for 25 minutes at 400. Remove the foil, cover with remaining cheese and cook for another 5 minutes.

It is simple and my family loves it! Plus is stays nice and gooey for leftovers too!

Chicken cordon bleu! Yummy! I always make this when we have ham in the house. The Lion House Cookbook has a great recipe for cordon bleu.

Looks like everyone loves to share their ideas. Mine is yummy ham soups. Boil the whole ham bone in water, then leave in the good (cut up) and take out the bad. Add any sort of vegetables, mmm. Or try pumpkin black bean soup -the recipe is in the Baird cookbook.
